BASSWOOD HONEY
Basswood Honey is one of the most prized single-varietal raw honeys in North America. The basswood tree, known in Europe as the Linden, has a brief bloom window each summer. Pour it and you'll see the light amber color immediately.
On the palate it opens with:
- delicate floral notes, not perfumed or cloying.
- the middle notes are subtly herbal with a faint minty lift,
- the finish is long and low-acid, which is why basswood
is the honey of choice for anyone who finds other honeys
too sharp or sweet.
In the kitchen, it dissolves cleanly into hot or iced tea without dominating the cup. It drizzles beautifully over fresh ricotta with a grind of black pepper. It glazes roasted salmon and pork without adding sugar-heavy caramel weight. Raw, unfiltered, single-origin, seasonal, and sourced from the Wisconsin prairie, Basswood is among the most underappreciated honeys most people have "never encountered."
For anyone building a serious honey pantry, Basswood is a must!
