Plum and Honey Jam
Ingredients:
- 2 lbs ripe plums (pitted and chopped)
- 1 1/2 cups honey
- 1 lemon (juiced)
- 1 tsp vanilla extract (optional)
Instructions:
- Combine the plums, honey, and lemon juice in a large saucepan.
- Cook over medium heat, stirring occasionally, until the plums break down and the mixture thickens (about 25-30 minutes).
- Add the vanilla extract (if using) and cook for another 5 minutes.
- Pour the jam into sterilized jars, seal, and let cool. Store in the refrigerator or process in a water bath for longer storage.
Honey-Roasted Plums
Ingredients:
- 6 ripe plums (halved and pitted)
- 3 tbsp honey
- 2 tbsp butter (melted)
- 1 tsp cinnamon
- A pinch of sea salt
- Fresh thyme or rosemary (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Arrange the plum halves in a baking dish, cut side up.
- Drizzle with honey and melted butter. Sprinkle with cinnamon and sea salt.
- Roast for 25-30 minutes until the plums are tender and slightly caramelized.

Plum, Honey, and Almond Tart
Ingredients:
- 1 sheet of puff pastry (thawed)
- 5-6 ripe plums (sliced thinly)
- 1/4 cup honey
- 1/4 cup ground almonds
- 1 egg (beaten)
- 2 tbsp sliced almonds
- Powdered sugar (for dusting)
Instructions:
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and transfer to a baking sheet lined with parchment paper.
- Sprinkle the ground almonds over the pastry, leaving a 1-inch border.
- Arrange the plum slices over the almonds, slightly overlapping them.
- Drizzle the plums with honey, then fold the edges of the pastry over the fruit.
