PLUM HARVEST

A few simple ideas for plum and honey recipes you can try, highlighting the natural sweetness of both plums and honey, perfect for early autumn fare:

Plum and Honey Jam

Ingredients:

  • 2 lbs ripe plums (pitted and chopped)
  • 1 1/2 cups honey
  • 1 lemon (juiced)
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Combine the plums, honey, and lemon juice in a large saucepan.
  2. Cook over medium heat, stirring occasionally, until the plums break down and the mixture thickens (about 25-30 minutes).
  3. Add the vanilla extract (if using) and cook for another 5 minutes.
  4. Pour the jam into sterilized jars, seal, and let cool. Store in the refrigerator or process in a water bath for longer storage.

Honey-Roasted Plums

Ingredients:

  • 6 ripe plums (halved and pitted)
  • 3 tbsp honey
  • 2 tbsp butter (melted)
  • 1 tsp cinnamon
  • A pinch of sea salt
  • Fresh thyme or rosemary (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Arrange the plum halves in a baking dish, cut side up.
  3. Drizzle with honey and melted butter. Sprinkle with cinnamon and sea salt.
  4. Roast for 25-30 minutes until the plums are tender and slightly caramelized.
  5. Garnish with fresh thyme or rosemary if desired. Serve warm with yogurt, ice cream, or on their own.

 

Plum, Honey, and Almond Tart

Ingredients:

  • 1 sheet of puff pastry (thawed)
  • 5-6 ripe plums (sliced thinly)
  • 1/4 cup honey
  • 1/4 cup ground almonds
  • 1 egg (beaten)
  • 2 tbsp sliced almonds
  • Powdered sugar (for dusting)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and transfer to a baking sheet lined with parchment paper.
  3. Sprinkle the ground almonds over the pastry, leaving a 1-inch border.
  4. Arrange the plum slices over the almonds, slightly overlapping them.
  5. Drizzle the plums with honey, then fold the edges of the pastry over the fruit.
  6. Brush the edges with beaten egg and sprinkle with sliced almonds.
  7. Bake for 20-25 minutes until the pastry is golden and the plums are soft.
  8. Let cool slightly, then dust with powdered sugar before serving.

Plum and Honey Smoothie

Ingredients:

  • 3 ripe plums (pitted)
  • 1 banana
  • 1/2 cup Greek yogurt
  • 1/4 cup almond milk (or any milk of choice)
  • 2 tbsp honey
  • A handful of ice cubes

Instructions:

  1. Combine all ingredients in a blender.
  2. Blend until smooth and creamy.
  3. Taste and add more honey if needed.
  4. Pour into glasses and enjoy chilled.
