For Finishing:

Instructions:

1. Make the Crust:

  1. In a large bowl, combine the flour, sugar, and salt.
  2. Add the cold butter and use a pastry cutter or your fingers to cut it into the flour until the mixture looks like coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough starts to come together.
  4. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the Filling:

  1. In a bowl, toss the sliced pears with honey, lemon juice, cinnamon, nutmeg, and flour. Let the mixture sit while you roll out the dough.

3. Assemble the Galette:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the dough into a rough circle, about 12 inches in diameter.
  3. Transfer the dough to the prepared baking sheet.
  4. Arrange the pear slices in the center of the dough, leaving about 2 inches of dough around the edges. Dot the pears with the small cubes of butter.
  5. Fold the edges of the dough over the pears, creating pleats as you go. The center will remain open.
  6. In a small bowl, beat the egg and brush the egg wash over the crust.

4. Bake:

  1. Bake the galette for 35-40 minutes, or until the crust is golden brown and the apples are tender.
  2. Remove from the oven and drizzle the top with more Two Cinnamon honey while still warm.

5. Serve: Allow the galette to cool slightly before serving. You can enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream!
