AUTUMN APPLES, PEARS & HONEY

Honey & Pear Galette
Ingredients:
For the Crust:
- 1 ¼ cups all-purpose flour
- 1 tbsp sugar
- ¼ tsp salt
- ½ cup unsalted butter (cold, cut into cubes)
- 4-5 tbsp ice water
For the Filling:
- 4 medium pears (peeled, cored, and thinly sliced)
- 2 tbsp Black Barn Two Cinnamons Honey
- 1 tbsp lemon juice
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp flour (for dusting the filling)
- 1 tbsp unsalted butter (cut into small cubes)
For Finishing:
- 1 tbsp Black Barn Two Cinnamons Honey (for drizzling)
- 1 egg (for egg wash)
- 1 tbsp raw sugar (optional, for sprinkling)
Instructions:
1. Make the Crust:
- In a large bowl, combine the flour, sugar, and salt.
- Add the cold butter and use a pastry cutter or your fingers to cut it into the flour until the mixture looks like coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough starts to come together.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Filling:
- In a bowl, toss the sliced pears with honey, lemon juice, cinnamon, nutmeg, and flour. Let the mixture sit while you roll out the dough.
3. Assemble the Galette:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough into a rough circle, about 12 inches in diameter.
- Transfer the dough to the prepared baking sheet.
- Arrange the pear slices in the center of the dough, leaving about 2 inches of dough around the edges. Dot the pears with the small cubes of butter.
- Fold the edges of the dough over the pears, creating pleats as you go. The center will remain open.
- In a small bowl, beat the egg and brush the egg wash over the crust.
4. Bake:
- Bake the galette for 35-40 minutes, or until the crust is golden brown and the apples are tender.
- Remove from the oven and drizzle the top with more Two Cinnamon honey while still warm.
5. Serve: Allow the galette to cool slightly before serving. You can enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream!

A healthy, simple dessert that can be made quickly and pairs well with ice cream or whipped cream.
Ingredients:
- 4 large baking apples (cored)
- 4 tbsp Black Barn BBA Crème Honey
- 4 tbsp butter
- 2 tbsp brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ cup chopped nuts or raisins (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Place the apples in a baking dish.
- Fill the core of each apple with brown sugar, butter, and chocolate honey, add nuts or raisins, if desired.
- Bake for 25-30 minutes until the apples are soft and tender.
- Add another dab of chocolate honey on top of the warm apple.
